About this coffee:

While the farm has a long history of coffee production, its journey with more distinctive varieties is still relatively new. Geisha was first planted here in 2019, followed by Pacamara in 2020. This lot brings the two varieties together as a field blend, showcasing the character of both in one cup.

The cherries are carefully harvested at peak ripeness before being depulped at the farm's mill. The coffee then undergoes a 36-hour fermentation, followed by washing and a period of soaking in clean water.

Drying takes place on a cement patio over approximately 15 days. The coffee is spread in carefully managed layers and turned regularly throughout the process to encourage slow, even drying.

About Finca Concepción:

Dating back to 1890, Concepción began as a cattle farm with just a small amount of coffee growing alongside it. The farm has been in Vanessa Braun Valle's family for over a century and has since grown into a dedicated coffee estate, expanding its coffee production while preserving some of its original Bourbon trees.

Today, the farm combines generations of experience with a thoughtful approach to farming. Coffee is grown under carefully managed shade, with minimal use of herbicides, and cherries are hand-picked at peak ripeness. The family also takes a conscious approach to water use, recirculating water during processing to reduce waste.
