at rish, we believe great brewing starts with thoughtfully sourced, high quality coffee beans. 

this guide helps you express their characteristics for the first time, using any pour-over dripper you prefer. 

dose: 15g
yield: 230ml
grind size: medium, (comandante-18 clicks, fellow ode gen 2 - 4”)
temperature: 92C (96C for our libericas)
water hardness: 80-100ppm 

intervals: 
00:00 - 50ml (circular, wet coffee evenly)
00:40 - 120ml (circular)
01:20 - 180ml (circular)
2:00 - 230ml (pour in centre)

time: around 3 minutes

think of this as a starting point — adjust, taste, repeat.

ratio: 1:2.5
temperature: 94C
water hardness: around 100ppm 

we’ve found that a 1:2.5 espresso ratio really opens up our coffees, giving a cup that’s generally sweeter, more balanced, and more expressive — especially when enjoyed black.

we also love using pre-infusion: letting water gently soak the puck at low pressure (around 1–2 bar) before full pressure kicks in. This helps reduce channeling and often boosts sweetness and clarity. it’s a great practice — but not essential. if your machine doesn’t have it, you’ll still be able to pull delicious shots!

this guide could easily yield great brew. but every coffee and equipment is different, so you might want to modify your recipe over time! it’s the result of understanding your beans, your water, your equipment, and simply your preference in taste.
