About the Coffee:

This unique coffee blend combines beans from the Al-Hayma and Anis regions, carefully decaffeinated using the CO2 method. This process maintains the coffee's original moisture content, resulting in a product ready for roasting. The final cup offers vibrant tasting notes of grape, raspberry, and lemon, showcasing the exceptional care and expertise involved in its production.

Producers in these regions meticulously handpick only the ripest cherries, often making several passes on each tree to ensure peak ripeness. After harvesting, cherries are cleaned and sorted at Sheba’s processing hub near Sana’a, then dried using a combination of raised beds and greenhouses. This meticulous drying process, which takes two to three weeks, ensures even moisture levels between 11-12%, preserving the beans' quality.

After drying, the beans are rested, hulled, and carefully sorted before decaffeination. The CO2 method used for decaffeination is both efficient and sustainable, allowing for the reuse of CO2 and the repurposing of extracted caffeine for products such as pharmaceuticals.

About the Region:

In the rugged and arid landscapes of Al-Hayma, on the outskirts of Sana'a Governorate, a dedicated collective of farmers works tirelessly to produce some of Yemen's most exceptional coffee. Despite the harsh, unforgiving climate and sparse greenery, these farmers cultivate their coffee at remarkable altitudes, reaching up to 2,250 meters above sea level. The coffee cherries in Al-Hayma take longer to ripen, resulting in a later harvest season than anywhere else in Yemen.

While the scale of production in Al-Hayma is modest—many villages collectively harvest no more than 15 tons of cherries annually, yielding just 1.5 tons of beans—the focus here is on quality over quantity. The skill and dedication of the farmers ensure that every bean is meticulously cared for, resulting in coffee that is truly unparalleled in flavor and character.

In the governorate of Dhamar, the Anis region has become a beacon of hope for Yemeni coffee, thanks to the collective efforts of its farmers. Blessed with fertile lands, abundant water sources, and towering mountains, the Anis region offers ideal conditions for coffee cultivation. These farmers, working at high altitudes with access to ample water, achieve yields that are higher than most other regions in Yemen.Each season, the farmers of Anis come together to produce an impressive 15 tons of high-quality cherries. Their collaboration and commitment to excellence make the Anis region a cornerstone of Yemeni coffee production, providing both quantity and quality in every harvest.
