About this cascara:
Our cascara is sourced directly from Gold Mountain Coffee Growers, made from the husks of perfectly ripe Pacamara coffee cherries. Produced using the natural process, the cherries are dried whole, helping preserve the fruit’s natural sweetness, complexity and vibrant character.
Gold Mountain selects cascara from carefully chosen micro- and even nano-lots, followed by intensive sorting to remove impurities. This meticulous approach results in an exceptionally clean and flavourful cup, with bright acidity, natural sweetness and notes of ripe fruit. While producing high-quality cascara takes considerable time and effort, the result is worth it. It also gives smallholder farmers an opportunity to make better use of the coffee fruit that would otherwise become processing waste.

Suggested recipes:
Use 1 gram of cascara for every 20 grams of water (about 10 grams of cascara for a 200ml cup). Steep in water just off boil for 5 minutes. Strain and enjoy!
